RECIPE: Cheesy Grilled Chicken Sliders

Sliders are so versatile and you can create a really fantastic and quick dinner without having to use many ingredients. Today I will show you my favorite chicken sliders recipe; it is easy, cheesy and delicious.

These cheesy grilled chicken sliders are perfect for lunch or dinner. I like to do them with grilled chicken, but feel free to make yours with fried chicken instead, use your imagination to customize this recipe. This recipe will prepare two servings, and take you around 30 minutes to make.

For the chicken:

  • 2 chicken breast, large
  • Salt to taste
  • Pepper to taste
  • 2 tbsp of worcestershire sauce
  • 3 tbsp of mustard

For the mayo sauce:

  • 1 cup of mayo
  • 4 tbsp of mustard
  • 1 tbsp of sugar
  • Black pepper to taste
  • A pinch of salt

To assemble:

  • 6 dinner rolls
  • 2 tbsp of melted butter
  • 2 tsp of oregano
  • 2 tbsp of parmesan cheese
  • 12 slices of mozzarella cheese
  • 2 tomatoes, sliced
  • 1 small lettuce

For the chicken:

  1. Cut your chicken breasts into thin pieces (approx. 15- 20)
  2. In a bowl, mix the mustard, worcestershire sauce, salt and pepper together.
  3. Pour the sauce over the chicken, making sure both sides are covered.
  4. Place your chicken in a skillet over medium heat. If you don’t have a non stick skillet, just add some olive oil or butter.
  5. Cook your chicken until both sides are brown, around 4 or 5 minutes each side.
  6. When ready set aside.

For the mayo sauce:

  1. In a medium bowl combine mayo, mustard, sugar, salt and black pepper. Remember that black pepper is really strong so add just a little bit to begin with, try it and if you think it needs it, add a bit more.

To assemble:

  1. Preheat the oven to 350 degrees.
  2. Cut your dinner rolls in half and place the bottoms in a pan.
  3. Spread 1 tbsp of the mayo sauce on each bun in the pan.
  4. Add the grilled chicken pieces and then another tbsp of the mayo sauce, this is optional.
  5. Place two slices of mozzarella cheese and then place the other half of the dinner rolls on top.
  6. Mix the melted butter with oregano and parmesan cheese. If you don’t have or like oregano, parsley is another great option.
  7. Brush the top of your dinner rolls with the melted butter mixture
  8. Bake for around 5 minutes or until the parmesan cheese looks golden brown and the mozzarella cheese is melted.
  9. Open your sandwich carefully, add tomato and lettuce, close it again and enjoy!
